Here is one of the many recipes you can find at Micheles Restaurant at Camping Village Montescudaio


Chef style rustic pasta
(Penne in salsa rustica dello chef)


Sauce:

In a pan lightly brown chopped onion, garlic and rosemary in olive oil.
Add diced salted bacon and an Italian sausage crumbled into little pieces. Let cook for a few minutes and add some Montescudaio white wine.
Add tomato sauce and let boil slowly for about half an hour.

Pasta:

Cook “penne” type pasta in abundant hot salted water for about 10 mins. Drain the pasta “al dente”

Heat up the sauce and once hot add the pasta and mix well on medium heat for about 2 mins.
The pasta should be served with some grated “pecorino” cheese on top.




Pasta with Fresh Grouper


De sauce:

In a pan heat up some olive oil, parsley garlic and red pepper flakes. Add freshly chopped tomatoes and simmer for 5 minutes.
Add fillet of grouper (200 grams for 4 people) and cook for a few minutes. Then add a small amount of White Montescudaio wine.

Pasta:

Cook some short pasta (penne) in salted boiling water for 10 minutes. Drain the pasta while still “al dente”.

Heat up the sauce and add the pasta and toss for about 2 minutes.
Serve with freshly chopped parsley.





Pork loin medallions with mushrooms

In a pan cook the mushrooms with butter, finally chopped sage, rosemary and onion for about 10 minutes.
Cut the pork loin into 1 cm slices. Dip in flour and cook in a pan with butter for a few minutes. Add ¼ cup Montescudaio DOC White Wine.
Add salt and pepper. Add mushrooms previously prepared.
Cook on low for about 10 minutes.
Shortly before serving add a tablespoon of heavy cream and some chopped fresh tomatoes!
